Practical and prescient, those are the two words that come to mind in describing Bill Owen's new book Craft Whiskey Distilling, published by the American Distilling Institute. Just like his book, How to Build a Small Brewery, Draft Beer in Ten Days, self-published almost thirty years ago, the author seems to anticipate the real-world questions, concerns and confusions of want-to-be craft distillers, most of whom having cut their teeth as home or craft brewers, desire to venture forth into the production of vodka, gin, whiskey, rum, etc. Distilling principles, styles, procedures, equipment, economics, licensing and even a three-year payback scheme called a "Down and Dirty Business Plan" are generously supported by resource lists, websites and recommended reading making this book the best single-stop shopping resource for all those interested in learning more about or diving into Craft Whiskey Distilling. The legendary craft brewing pioneer and father of pumpkin ale has again `lain across the wire' for the rest of us to climb over into the spirits world.

This manual is intended for the craft whiskey distiller who aims to make excellent-quality malt whiskey through artisan distillation methods. This manual describes, at the craft level, the process of making whiskey. It gives detailed instructions on how to distill one barrel (53 gallons) of 120-proof malt whiskey.The reader learns about the principles of distillation, types of stills, and the process of distillation. The manual also goes into detail about how-to make head and tails cuts-the elusive operation that a distiller needs to learn in order to create a world class whiskey. Most important is the chapter on mashing and creating a barley wash for fermentation. The all-grain recipes in the manual are adapted from the mashing (brewing) process used by commercial malt whiskey distilleries. Finally, the wash will be distilled using the double-distillation method employed by most of the renowned malt-whiskey producers.

I have collection of beer brewing books and this is definitely not going to add anything that is not covered in much more depth in the other books. At only 47 pages with half of that being illustrations, I read it cover to cover in half an hour. For someone that has no idea about brewing it can give you the basic jist of the process and equipment in simple straightforward way. To me this is something that you would get for free with your first kit from your homebrew shop - not pay for.

The book numbers 93 pages, but if you exclude appendices, question and answer sections, and non-technical drawings of stills, the number drops to 50. The book focuses on beginning a micro-distillery to produce moonshine. Some of the information could be used for the home hobbyist, but most of the recipes and equipment were designed for someone making very large batches of 'shine.
Perhaps the best thing about the book was the simple instructions for building necessary auxiliary equipment (not the still), including where to buy the components and supplies. But the book is non-technical, and much of the content that the author brushes over is not worth reading, because you will need to pick up a more technical book and read that if your intentions are really to start a micro-distillery. In the end, I think this book had a good concept- go through the steps needed to get into the business of making legal moonshine, while leaving the technical distilling aspects for another book. But once the 20 pages of useful information was written, a lot of pulp was thrown in to justify this being a book and not a pamphlet.

Modern Moonshine Techniques has three sections: First is how to use sugar to distill a "moonshine." Second, how to build an inexpensive corn cooker and make corn whiskey. Finally, and most importantly, this book, with text and illustrations, shows how to build a mash tun to create a grain whiskey wash. And, then instructions to distill that wash into whiskey.

Originally published in 1976 The Moonshine Manual is a wonderful book if you live on a farm and can drive to town for a bag corn. Along with the typewriter the town Feed & Seed store have disappeared.Today there is a renaissance in micro-brewing and craft distilling. The principals of distilling described is this book are correct but the methods used by today's "urban" moonshiner have changed because every town in America has a home brew shop where he or she can take a home brewing class and buy his ingredients to make beer and moonshine. (Mostly yeast and sugar.)The techniques described in this book are not used by today's modern moonshiner because better how-to information (books) and equipment are readily available. It is estimated that there are 15,000 modern moonshiners in the USA and the industry is currently going through a renaissance. Some home brew shops and internet brewing supply companies are selling the15 gallon pot stills like hot cakes
